Our favorite sauce recipe:
1/2 cup olive oil
1 garlic clove minced
1 small can tomato paste
1 small can water
Simmer 15 minutes
Add:
2 Cans Crushed Tomatoes (1 lb 12 oz each)(usually use Furmanos)
1 Tablespoon Fresh Parsley - minced
2 Tablespoons Fresh Basil - minced
8 oz Motts Applesauce (not natural)
Simmer 45 minutes
Add:
1/3 cup grated Pecorino Romano cheese
Okay - that's the recipe as written. Of course - I modify to taste by:
Adding salt - careful as the cheese gives it salt
Adding at least 2 cloves of garlic - minced
Adding a few Tablespoons of sugar
Much more Basil
More applesauce
Saute Pork Steaks in the oil prior to adding any other ingredients; putting them back in once the crushed tomatoes are added
Add at least 1/2 cup of cheese
I also mill the crushed tomatoes to remove the seeds
I usually make three batches at once - why go through the effort time and time again? This always tastes better the next day and freeze's very well for up to 3 months.
